"It Girl" Pasta Recipe

Now and then you see a delicious recipe trending on TikTok. One day, my boyfriend and I were craving something that included zucchini, his favorite veggie, and pasta, one of my main food groups. We came across a general basis of this recipe, from Eat Well and he concluded that it just wasn't for him. But I saw the possibilities for what this pasta could be. I've made this recipe several times since then, and it has become my favorite comfort meal. I feel good after eating it, and not too sluggish and bloated. So, therefore, I'm calling it, "It Girl" Pasta. Because she is that girl.
Ingredients list for the recipe
2 medium zucchinis, I typically do 3!
2 cups cherry tomatoes
Your choice of pasta, pictured above I've done penne, rotini, and bow tie!
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon black pepper
1/4 cup chicken stock, but in my opinion, I always need a splash or 2 more
1 cup grated parmesan, more NEVER hurts anyone though!
Chicken, but because I still live in a dorm, I do frozen precooked.
How to make the tomato zucchini pasta recipe:
1. Cook pasta al dente in a pot of boiling water, according to package directions.
2. Add two tablespoons of olive oil to a large skillet on medium heat. Sauté the diced zucchini until golden on the edges, stirring from time to time with a spoon. Remove the zucchini to a plate and set aside.
3. Still in the same skillet, add the cherry tomatoes, black pepper, garlic powder, chicken stock, and cover with a lid. Cook the tomatoes until they are blistered, stirring regularly with a spoon.
4. Push the tomatoes on the side of the pan and add cooked zucchini, cooked pasta, cooked chicken, and parmesan. Give a good stir and reheat for a couple of minutes, adding a little chicken stock and extra cheese if necessary.
